The Ultimate "Healthy" Chocolate Chip Cookies

INGREDIENTS
3/4 cups of almond flour
1/4 cup of coconut flour, sifted
1 teaspoon of baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon of salt
2 cups of old fashioned rolled oats
1 cup of porridge oats
1 cup of olive oil
1/2 cup of honey (use less if you don't need your cookies to be that sweet)
2 eggs, preferably at room temperature
2 teaspoons of pure vanilla extract
3/4 cup of semi sweet chocolate chips
1/4 cup of unsweetened coconut flakes

DIRECTIONS:

  1. Whisk the flour, baking soda, cinnamon, salt and oats together. Set aside.
  2. Use a hand mixer to mix the oil and honey together. Add the eggs and beat on high until mixed in. Add in the vanilla and mix in. 
  3. Add the dry ingredients to the wet ingredients and mix on low until combined. Add the chocolate chips and coconut flakes as the mixer is on low speed or mix them in by hand.
  4. Chill the dough in the refrigerator for 1 hour.
  5. Preheat oven to 350oF (177oC). Line two large baking sheets with parchment paper and set aside until the hour is up.
  6. (1 hour later) Roll balls of dough (as big or as small as you want) and place on mat with 2 inches in between each ball
  7. Bake for 10 minutes or until you see the sides turning lightly browned.
  8. Remove from oven and let cool for 5 minutes before digging in
