Tofu Stir Fry with Bok Choy, Oyster Mushrooms, and Broccoli

Serves 3
Cook Time: 30 minutes

INGREDIENTS:
1 block extra firm tofu, cut into cubes
8 ounces of oyster mushrooms
1 head of bok choy
1 head of broccoli
6 tablespoons low sodium soy sauce
2 tablespoons white vinegar
4 teaspoons sesame oil
2 teaspoons siracha
4 cloves garlic, minced
1 inch piece of ginger, minced
2 tablespoons pb2

STEPS:

  1. Spray skillet with cooking spray and sautee tofu on medium-high heat until golden on all sides.
  2. Heat a wok with cooking spray and add oyster mushrooms. Let cook for 10 minutes and then add broccoli. Let cook for another 10 minutes and then add bok choy. Let cook all together for another 10 minutes. 
  3. In the meantime, prepare sauce by combining all remaining ingredients into a blender. Pulse until well mixed. 
  4. Transfer tofu to the wok and pour the sauce over everything. Mix together with a spatula and cook all together for another 5 minutes. 
  5. Serve with brown rice or quinoa.
