Hella Moist Guilt-Free Banana Bread (GF/Vegan) - 3 ways

INGREDIENTS
4 ripe bananas, mashed
1/4 cup almond milk
1 tsp apple cider vinegar
1/8 cup honey or maple syrup
1 tbsp avocado oil (or coconut or olive oil)
1 tbsp vanilla extract
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon, extra to top

3 FLOUR COMBOS:
COMBO 1:
1/2 cup quinoa flour
1/2 cup ground old fashioned oats or oat bran
1/4 cup coconut flour
COMBO 2:
1/2 cup almond flour
1 1/2 cup oat flour
COMBO 3:
1/2 cup almond flour
1 cup oat flour
1/8 cup coconut flour

1/2 cup chocolate chips, extra to top
Optional add-ins: walnuts or pecans

STEPS

  1. Preheat oven at 180C or 375F

  2. Combine wet ingredients into a bowl and mix well with a whisk.

  3. Combine dry ingredients (except chocolate chips) into a separate bowl and mix with a spoon.

  4. Add wed ingredients to dry ingredients and mix all together with whisk.

  5. Fold in chocolate chips with a spoon.

  6. Line bread pan with parchment paper and spray with preferred cooking spray to avoid any sticking.

  7. Pour batter into parchment paper and even out with the spoon. Top with extra chocolate chips and a sprinkle of cinnamon (unless you hate cinnamon).

  8. Put in oven and let bake for 50 minutes - 1 hour and 10 minutes (depends on your oven).

  9. When finished, take out the loaf and check to see if it's ready by sticking a knife in the middle. If there's any gooey residue on the knife, it needs a bit more time. Throw it back in the oven for another 10 minutes.
