Apple Banana Oat Muffins

INGREDIENTS
2 ripe bananas, mashed
1 cup unsweetened apple sauce (about 2 apples)
1/4 cup almond milk
1 tsp apple cider vinegar
1/8 cup honey or maple syrup
1 tbsp avocado oil (or coconut or olive oil)
1 tbsp vanilla extract
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon, extra to top
1/2 cup almond flour
1 cup oat flour
1/8 cup coconut flour
1/2 cup dark chocolate chips

STEPS

  1. Preheat oven at 350F.

  2. Combine wet ingredients into a bowl and mix well with a whisk.

  3. Combine dry ingredients (except chocolate chips) into a separate bowl and mix with a spoon.

  4. Add wet ingredients to dry ingredients and mix all together with whisk.

  5. Fold in chocolate chips with a spoon.

  6. Line muffin tin with paper cups or parchment paper and spray with preferred cooking spray to avoid any sticking.

  7. Pour batter into the cups and even out with the spoon.

  8. Put in oven and let bake for 45 minutes (depends on your oven).

  9. When finished, take out the muffins and check to see if it's ready by sticking a toothpick in the middle. If there's any gooey residue on the knife, it needs a bit more time. Throw it back in the oven for another 10 minutes.
